Gerardo's Italian Bakery in West Boylston Massachusetts offers a Cannoli Bar where you can make your own cannoli offering you three different kinds of shells (regular, chocolate and gluten free) a bunch of different flavored ricottas, and about 14 different toppings. You can then customize your cannoli however you like. They do have a bunch of favorite combinations, but my favorite is still the tradition
